OWEGO, N.Y. (WENY) -- Brickhouse Pizza Co., a new pizzeria operated by the Tricolla family, has officially opened its doors in Owego. The family's culinary knowledge spans four decades, and the Tricollas aim to bring a unique dining experience to their community.

"We're from Long Island originally, and we have been in the restaurant business for well many years ago, in several different forms, but we were in the pizza business on Long Island, in Brooklyn and we moved up here in 2004, permanently in 2015, and we felt the need for something a little bit different in the area so we started this restaurant," says owner, Susan Tricolla.

At the heart of Brickhouse Pizza is Eric Carbone, Susan's son-in-law and the chef behind the pizzeria creations. From traditional recipes to unique innovations, Cardone's passion for pizza and wood-fired ovens shapes every dish.

"I make the pizzas. I have a long history and a connection with wood-fired ovens," says Chef Eric Cardone. "I used to build them myself with my family way back, a mason by trade. Grew up in an Italian family cooking all the time and pizza was something near and dear to my heart. The idea for the wood fire oven is traditional pizza is made with wood fire. "

The wood-fired oven, a centerpiece of the pizzeria, is what sets Brickhouse Pizza apart. Once the pizza is topped, it is cooked in the oven in just three to four minutes, giving it a distinctive flavor.

"It's just a different flavor entirely. It's a different taste. It's a different way of cooking and it's absolutely delicious and it's unusual with the char on it, just a little bit of a charm," explained Tricolla. 

Cardone shared the importance of careful preparation, which ensures each pizza cooks quickly while maintaining its texture and flavor.

"The end result comes out the same way to stretch the dough. You don't want it to be too thin to where it can burn through on the bottom. You want it to be thick enough that it creates a nice bit of crust on the bottom, so you don't get all that flop and then our oven cooks a pizza in about three, three and a half minutes," shared Cardone.
