INTERLAKEN, N.Y. (WENY) -- Lively Run Goat Dairy, one of the longest running goat dairies in the country, is located in the middle of the Finger Lakes. This farm began operation back in 1982. 

Head cheesemakers at the farm said their cheese is unique because they invent their own flavors, dedicating their work to Finger Lakes locals. 

Cheesemaker Valerie Delong said the flavors really take form in Lively Run's aging room. After the cheese has been prepared, processed and shaped, the real fun happens when it is aged. 

“Being in contact with this room, with the different microbes that are happening in here...it creates a much more complex flavor,” she said. "You get all these different hints of nuttiness, and creaminess, or butter, or caramel...all of those.” 

Owner and head cheesemaker Pete Messmer said his team strives to make their product unique to the region. He said the goal is to make new flavors with dairy production methods in the United States, as opposed to other methods across the globe. 

“One of the goals that we had really early on was to develop our own unique styles of cheeses that weren't knockoffs of traditional, European cheeses.> 

Messmer said they focus on making the highest quality goat cheeses of all varieties, including blue cheese, traditional chevre and even feta. Most styles of cheese are named to honor the region it came from. 

“What we've done here...is kind of develop our own recipes and name them after places where we're from...The Finger Lakes,” he said.  

Delong said Lively Run Dairy is open to the public, for cheese tastings and also allowing the community to interact with the goats on the farm.
